Welcome to 2021. Looking forward to this new year, and whatever it may bring, I’m sure we can all roll with the punches.

So this recipe goes back to when the lunch ladies at grade school and junior high gave us some of the tastiest, messiest stuff to eat, and this Apple Brown Betty is one of them. Historically, a “betty” is a cooked pudding with bread as one of the ingredients. It’s healthy, hearty and filling and pairs well with good vanilla bean ice cream, even in the winter. And this recipe is the real recipe, not something that just comes out of a box or sits in the microwave. Good tart apples like the Granny Smiths shown do well in this dessert, and if your kids and grandkids don’t love it, they are space aliens.

Apple Brown Betty – Betty Crocker Vintage Recipe

Enjoy this brown Betty – a traditional dessert made by baking apples and bread crumbs.

Ingredients

4 cups soft white bread crumbs (about 6 slices bread)

1/3 cup butter, melted

1 cup packed brown sugar

1 tablespoon ground cinnamon

4 large apples, peeled, cut into 1/4-inch slices

1 cup apple cider

Steps

1 Heat oven to 350°F. Lightly spray 2-quart casserole with cooking spray.

2 In medium bowl, stir together bread crumbs and melted butter. In small bowl, mix brown sugar and cinnamon.

3 Place half of the apple slices in casserole; sprinkle with half of the brown sugar mixture and half of the bread crumb mixture. Repeat layers. Pour cider over top.

4 Bake 45 to 55 minutes or until apples are tender and topping is browned. Serve warm.

2 days ago, I took out the last frozen vacumme bag of sausage and made your penne/sausage dish which I portioned out in 3 fresh saver bags and put in the reefer freezer. I STILL haven’t made that stove top bread yet and have the flower in a canister waiting for an UNREP from the canister to the mixing bowl. I’ll have to empty the oven of cookie pans to use the oven for proofing the dough but I don’t no when to start because I keep loafing about the bread project. later Alligator.

You musta been a’peekin’ in my freezerator Mi’Lady and spotted those 3 containers of vanilla bean Beyers I gots in there. Is this an offer for a get together and a sharing of resources? Or further proof that you love us and wants us to be happy? Or maybe you noticed I’ve just about eaten up all of my Christmas Cookies and Imma gonna need something for my sweet tooth? Did ya pay attention to the multitude of beefed, porked, and birded beast that was in there too?

Nothing like a hot Apple Betty with a scoop or 2 of vanilla bean. And maybe a cup of two of hot rum spiced apple cider. You do know, of course, that Only Army Mom gonna fuss about us leading her into temptation? Remember the dogos are hiding under the bed everytime she gets the walking leashes out. She made mention about having to do extry walking to keep in shape from trying all the goodies. I look at it this way; Round IS a shape!
