Another good, filling, satisfying recipe comes from Betty C’s kitchen, one that you can season to your own tastes (and needs), and will fill the bill on those cold, dark nights when it sounds like some unfortunate political animals might be out there howling in the outer darkness.

Creamy Ground Beef Noodle Casserole

“Comfort” is the key word for this creamy ground beef and noodle casserole that makes a memorable meal out of simple ingredients.

Ingredients

8 oz uncooked farfalle pasta (about 2 1/2 cups)

1 lb ground beef

1 can (15 oz) Muir Glen™ organic tomato sauce

½ teaspoon garlic salt

¼ teaspoon black pepper

1 cup sour cream

1 cup cottage cheese

½ cup shredded Parmesan cheese

¾ cup sliced green onions

1 ½ cups shredded Cheddar cheese (12 oz)

Steps

1 – Heat oven to 350°F. Spray 13 x 9-inch baking dish or 2 1/2 to 3-quart casserole with cooking spray. Cook pasta until al dente, about 11 minutes; drain, and set aside.

2 – Meanwhile, in 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Stir in tomato sauce, garlic salt and pepper; cover and simmer 2 to 3 minutes or until slightly thickened.

3 – In large bowl, mix sour cream, cottage cheese, Parmesan cheese and 1/2 cup of the green onions; stir in cooked pasta.

4 – Spoon half of the pasta mixture into baking dish. Top with half of the beef mixture and 3/4 cup of the Cheddar cheese. Repeat with pasta mixture, beef mixture and remaining 3/4 cup Cheddar cheese. Bake uncovered 25 to 30 minutes or until mixture is thoroughly heated and cheese is melted. Top with remaining 1/4 cup green onions, and serve.

Expert Tips

  • Wide egg noodles or mafalda pasta would also work in this recipe.
  • Stir 1/2 teaspoon crushed red pepper into beef mixture for a spicy kick.

Another great Comfort Food for the Winter Season is good ole SOS.

We have had several recipe versions of that delectable, stick-to-the-ribs meal.

The ninja family still uses chipped beef, but on occasions, hamburger meat is fine as well.

Miss eating breakfast in the Messhall or having it mermite to us while in the field.

Thank Goodness for Fort Lee, VA and Army Cooks.

Heeeeeeeeyyyy!!!! daHell? Check the date/time stamp from last Saturday’s fiasco. You will note that I was the FIRST to offer my congratulations to them blind squirrels that happened to find a nut. The gator juice wasn’t even poured on the coach good before I did so. And btw, you can’t lie to me like I was a wife, the gun pr0n and Ms Thangs that you post is proof that you love us and want us to be happy 364 days and 21 hours out of the year.

Good chow choice Ex. Makes this on occasion using the wide egg noodles. It also goes good with a skillet of hot, fresh buttermilk cornbread.

ps Navy may have beat Army but Epstein didn’t hang himself.

Was quite happy to skip supper tonight due to a very hearty and late lunch. Now I want noodles and beef. But am thinking more along the lines of mushrooms and gravy kind of sauce. Guess that would be more of a stroganoff. Yeah, but it sounds good. Maybe tomorrow. Have a couple of jars of home canned mushroom soup base that probably should be used before long.

Also, Casa OWB will be making some of that Rotel/Velveeta “queso” dip stuff to give to the neighbors for munching upon the next few days with red and green tortilla chips. Oh, sure, it’s plenty “hokie,” but has become something of a tradition in the ‘hood. A package of crisped up breakfast sausage is a great addition – the hot variety is optional but preferred by some local households.

Sea Dragon’s Ground Beef Stroganoff

2 Tbs butter
8 oz sliced cremini mushrooms
1 cup chopped onions
2 cloves garlic, finely chopped
1 Tbs sweet paprika
2 tsp Old World seasoning
1 lb lean ground beef
1 1 /2 cups beef broth
1 Tbs Worcestershire sauce
3/4 tsp salt
1/4 tsp pepper
1/4 cup all-purpose flour
1 cup sour cream
6 cups cooked pasta

In a skillet, melt butter over medium heat. Sautee mushrooms, onions and garlic 5 minutes. Add paprika and seasoning, and cook until mushrooms and onions are tender. Remove from skillet, place in a bowl, and set aside.

Increase heat to medium-high. Cook beef until no longer pink; drain. Stir in 1 cup of the beef broth, Worcestershire sauce, salt and pepper; heat to boiling. Beat flour and remaining beef broth until incorporated; stir into beef mixture. Add mushroom mixture; return to boiling, and stir constantly until mixture thickens. Remove from heat and stir in sour cream.

Serve over pasta.

Serves 8 (Yeah, right.)
