Skillet Beef Taco

Who doesn’t like tacos? Trouble is, they can be a PITA to stuff, are messy to munch, and will blow the kitchen up. Here’s a one skillet answer.

You’ll need:
Taco Seasoning (home made or store bought)
1/2 lb. ground beef
1 15oz. can black beans
1 pint grape tomatoes (or one large tomato)
4 oz. tortilla chips
2 oz. shredded cheddar cheese
1 green onion

You’ll do:
1) If making home mead, combine the ingredients for the homemade taco seasoning in a small bowl (chili powder, smoked paprika, cumin, cayenne, oregano, salt, and pepper).

2) Slice the green onion and cut the grape tomatoes in half (if using one large tomato, cut it into a small dice).

3) Add the ground beef to a skillet and cook over medium until it is fully browned. If you’re using a higher fat content beef (20% or higher), drain the excess fat before moving to the next step. If you’re using a very lean ground beef (<10% fat) you may need to add a touch of oil to the skillet to keep the beef from sticking.

4) While the beef is cooking, rinse and drain the can of black beans. Add the black beans to the skillet with the prepared taco seasoning. Continue to stir and cook over medium heat for about 2 minutes more, or until heated through.

5) Add the tomatoes to the skillet and continue to cook over medium, stirring often, until the tomatoes begin to break down a bit (about three more minutes).

6) Finally, add the tortilla chips and stir to combine with the other ingredients in the skillet.

7) Top the skillet with the shredded cheese, place a lid on top, and let it heat for 1-2 minutes, or just until the cheese is melted. Sprinkle the sliced green onions over top just before serving.

Top with favorite salsa, sour cream, avocado, etc. Feel free to scale to suit your family’s needs. Hat tip to Budget Bytes.

We’ll see your tacos with a Taco Pie…. For those who like to cook under pressure… Instant Pot Taco Pie. Ingredients 1 lb Lean Ground Beef or Turkey (93% lean is ideal) 1 1 oz Taco Seasoning Packet (or 3 Tbsp of my Homemade Taco Seasoning) 1 1/2 cups Refried Beans 1/3 cup Salsa (4) 8 inch Flour Tortillas (can use corn, but they are more fragile) 1/4 cup Enchilada Sauce (optional) 2 1/2 cups Shredded Cheese or more if desired. (I use sharp cheddar and Monterey Jack blend. You can also use colby jack) Garnish Sour Cream Cilantro Extra Salsa Hot Sauce Instructions Use the Sauté setting on your pressure cooker (or use a frying pan) to brown the meat, stirring in the taco seasoning in about halfway through. Cook meat until done. Set aside. Cancel the sauté setting. Wash/Rinse out the pot and put 1 1/2 cups of water in it. Mix the refried beans with the salsa. Spray a 7″x3″ springform or push pan with cooking spray. Place 1 of the tortillas in the bottom of the pan and spread 1/2 cup of the refried bean mixture over it. Sprinkle on 1 cup of the meat evenly, (then 1/4 cup enchilada sauce, if using) then 1 cup of the cheese. Place a second tortilla in the pan, then 1/2 cup of the refried bean mixture, 1 cup of the meat, and then 1/2 cup of the cheese (the first layer has 1 cup of cheese, that is correct). Place a third tortilla in, then 1/2 cup refried bean mixture, 1 cup of the meat, and 1/2 cup of cheese. Place the final tortilla on and gently press in place. Cover the pan with foil and place on the trivet/rack, and use the handles to place them in the pot. You can also use a sling, and set the pan on the trivet that you will put in the pot first. We like tacos, Looking good, I have some grounded beef beast close by. And like The Lioness, I have to avoid the peppers now-a-days. They are a hunka, hunka, hunk of burning love.

I hear ya, Pappy. I wuz just going by what the Aeronautically Designated Sub Hunting, Swimming Swabbied Squidley Boss called for under his “You’ll do” section. Not gonna question whether he actually meant to say “home made”, V “home mead” and would be curious if the skulls of our enemies would frost up like a heavy cut crystal glass mug to accept the filling of said lager. Hmmmm we may have to experiment with that. Turn up the a/c in your hooch and I grab some skulls off the shelf and meet you there. Guess I need to bring the lager too?

These are great, we love Tacos any day and yes, kinda messy and trying to make them as fast as the kids eat them. I had to institute a rule that my son can’t run back into the Kitchen and ask for a second taco as I’m still making myself a first one, and usually the third one as my daughter gets to eat first because she’s slower.
SO, this looks like I can make is and slop it out as quick as I can and then we all can sit down and I can get at least TWO or three decent bites in and down before my son askes for more and the sides, YEAH, sour cream and guac and maybe some sweet not too hot (EX-PH2) banana peppers or something and possibly some fresh chopped tomatoes as I’m just getting the last three red ones off the plant…maybe a couple big cherry tomatoes too.

When I was a kid, Mom used to make up a similar concoction that she called a tamale pie.

In the most primitive form you can just dump some canned chili in a microwave safe containter, mix in some Fritos or similar delightful health food, top it with some Velveeta, add a tablespoon of water to make some steam and nuke it for about a minute.

Albeit, your recipe du jour sounds a wee bit better.

If shit gets out of hand, there’s always ketchup as an alternative for tomatoes and Tabasco Sauce to make the ketchup even mo’better.

Actually the recipe is timely for Taco Tuesday. We’ve got an abundance of tomatoes in the raised garden beds since the wife decided to use a whole envelope of seeds to get starter plants.

None of the wife’s friends wanted to do a garden so she planted all of them. Now the friends want a share of the tomatoes (and squash/sweet potatoes). Only 1 returned the favor via a mason jar of salsa.

See if I got this right Berliner. I can swap a mason jar of salsa for tomatoes, squash, and sweet taters? DEAL!!! I’ll even throw in a gallon jug of the homemade house wine…sweet, iced tea…and a loaf of light bread with a jar of Duke’s Mayo for ‘mater sammiches. Make room for Skyjumper, he’ll bring some of that good cheese and butter for a squash casserole, Graybeard will make some pie shells for sweet tater pie. We got this…THANKS!

Always have a nice variety of cheeses here in my refrig…after all, this is The CheeseHead State where our motto is “Come smell our derriere” (or was that “dairy air”…I forget) (grin)

Just picked up some squash today for freezing at a nearby farm….acorn, turban, spaghetti, sweet dumpling. $.50 to $.75 each and you put your money in an old mailbox with a slot cut in the top(honor system).

So when does this party begin?

Hmmm…Berliner done went dark on us. Maybe should have thrown in an offer for cat heads with sausage gravy? And rashers of bacon?
