Beignets with powdered sugar
Feel like I’ve been “awarded” extra duty. Ahh, no rest for the wicked. Here’s something a bit different from me, but still meets my criteria of good and especially, easy.
Easy Breakfast Beignets
You’ll need:
1 can Grands Biscuits
Oil for deep frying- couple inches will do. I like canola.
Powdered Sugar
You’ll do:
Heat the oil to around 350 degrees.
Separate the biscuit rounds, cut each into quarters.
Form into balls, deep fry until golden brown, a minute or so. Don’t crowd the fryer.
Remove with a spider, drain.
Coat with the sugar.
Great with morning coffee. For more decadence drizzle with chocolate or butterscotch sauce, whipped cream. I think this one will challenge guitarcarver and his pressure cooker.

Yep, ’bout the only thing a can of whomp cat heads is good for. (Called whomp biscuits cause back in the day, you had to actually “whomp” the can, along the seam, on the edge of the counter top).
Nowhere near the snakablity of Le Cafe de Monde (since 1862) in the French Quarter of NOLA, but these will work in a pinch. Mama would make them on occasion just so she wouldn’t have to so cookies or real donuts.
And no, I don’t see these getting made in the pressure cooker either, but if it can be done, my money would be on guitarcarver. *snerk*
Pressure frying is what KFC and other yard bird fast food joints use to cook up the chicken. It’s specialized gear and trying it will likely blow a regular PC straight into the overhead. Loudly.
^WORD^ VERY LOUDLY. Way back yonder when burning bird for The Colonel, we still used the individual pressure fryer pots. You pop the lid off of them rascals before it was time to and it could get loud AND critical…quickly. Cooked 3800 bird in them pots one Mother’s Day. Got out of KP on an all nighter in basic cause I cooked the Mess SGT some KFC Style Chicken so he could impress the Battalion & Company Commander. Mofos almost sent me to cooks school to show their appreciation.
Am so glad to have had the Cafe du Monde experience several times. Yummy.
Cafe du Monde prolly makes the very best beignets EVAH, including some I had in Paree and on the Riviera. I like the ones sprinkled with caramel…with that double chocolate hot chocolate.
They also have bakery chefs who come in at 0-Dark-30 to fry the little bastards from the dough they made the day before. Admittedly these are poor cousins, but don’t need all that fuss. A tablespoon of cinnamon in the sugar wouldn’t be too bad, either.
Beigners? You found a shortcut for making beigners?

For those who like to cook under pressure:
(This recipe requires a piece of specialty equipment, namely the “egg bites” pan which does more than just eggs. The official IP one is available in most WalMarts:

3 Ingredient Donut Holes
Ingredients
1 1/3 c cake mix basically half a box of cake mix, we used triple chocolate fudge
1/2 c buttermilk
1 egg
1 c chocolate chips white
1/2 tsp coconut oil
Instructions
Mix together your cake mix, buttermilk and egg well.
Spray the inside holes in your egg mold with non stick spray.
Put a trivet inside your pot with 1.5 c water.
Fill your egg mold holes 3/4 of the way full and cover with foil, use a foil sling to lower egg mold on to your trivet.
Close lid and steam valve and set to pressure high for 12 minutes.
Allow to naturally release steam for 2 minutes, then let out rest of steam.
Take mold out of pot. Take off foil immediately and allow to cool for a few minutes.
Pop donut holes out of mold and set on a paper towel, or enjoy them immediately if you aren’t adding frosting.
If adding frosting put white chocolate chips and coconut oil dollop in the middle. Put in microwave for 30 seconds.
Stir, then microwave for additional 30 seconds. Stir until lumps smooth out.
Spoon white chocolate over tops of donut holes, place on non stick surface (parchment paper works), then sprinkle with sprinkles etc… Allow to cool and harden then enjoy.
Not really a “donut,” but these work in a pinch and are darn tasty.
PS – while I thoroughly concede that pressure cookers are not to be used for frying, at the end of the day the above recipe does not result in having to dispose of used oil, which is always a good thing. However, you can make donuts if you have an “air fryer lid” for the IP or your brand of cooker. But since we are talking about breakfast munchies, I see your faux beignets and raise you…. Cinnamon Rolls: Ingredients Filling 3/4 cup light brown sugar packed 4 tbsp granulated sugar 2 tsp cinnamon ground 1/8 tsp cloves ground 1/8 tsp salt 1 tbsp butter melted Cinnamon Rolls 1 1/4 cup milk 1 tbsp white vinegar 2 1/2 cups all-purpose flour, plus more for work surface 2 tablespoons granulated sugar 1 1/4 tsp baking powder 1/2 teaspoon baking soda 1/2 tsp salt 7 tbsp butter melted 2 cups water Cream Cheese Frosting 2 tbsp cream cheese softened 2 1/2 tbsp milk 1 1/2 cups powdered sugar Instant Pot 7 inch pan Trivet Instructions In a small bowl, whisk together the light brown sugar, 4 tablespoons granulated sugar, cinnamon, cloves, and salt. Whisk in the 1 tablespoon melted butter until it resembles wet sand. Set aside. Combine the 1 1/4 cup milk and vinegar in a cup. Let sit 5 minutes. (This will make sour milk, buttermilk may be used in place of this) Brush 1 tablespoon melted butter on the bottom and sides of a 7-inch push pan. Set aside. In a large bowl, whisk together the flour, remaining 2 tablespoons granulated sugar, baking powder, baking soda, and 1/2 teaspoon salt. Mix 2 tablespoons melted butter into the soured milk. Make a well in the center of the dry ingredients and pour in the soured milk + butter. Mix until a dough is formed. Pour your dough onto a floured surface and knead until the dough becomes smooth. Roll the cinnamon roll dough into a 9×12 rectangle. Brush the dough with 2 tablespoons melted butter and sprinkle the filling on top of the butter – leaving 1/4 inch of space… Read more »
