Chicken Tenders

Sorry, had to. *grin*

While this recipe is for oven-fried tenders, the three bay coating technique is classic and tenders so prepared can just as easily be pan or deep fried. Chef’s choice. I use the air fryer function on my Ninja and there’s not a dimes worth of difference that I can tell. YMMV.

Oven Fried Chicken Tenders

You’ll Need:
1/4 cup all-purpose flour

1 egg

1 tablespoon water or milk

1 cup plain or Italian style or panko crispy bread crumbs (I like panko)

1/2 cup grated Parm cheese

1 1/4 lb (20 oz) chicken breast tenders (from two 14-oz packages)

Favorite dipping sauce(s)

You’ll Do:
1) Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.

2) Season tenders with S&P. In shallow dish, place flour. In another shallow dish, beat egg and water. In third shallow dish, mix bread crumbs and cheese. Coat chicken with flour; dip into egg mixture, then coat with bread crumb mixture. Place on cookie sheet.

3) Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown. Serve with dipping sauce.

Or fry in 425 degree oil until golden brown. Remember, my recipes are guidelines, not carved in stone. Want Tex-Mex? Add cumin and chile powder to the flour, garnish with cilantro. More Euro? Go Simon-Garfunkel with sage, rosemary and thyme (parsley for garnish). Asian- go tempura and…see where I’m going here? Anyway, hat tip to Betty Crocker for the basic recipe.

I know the big event is six weeks out, so plenty of lead time as to whether you want to try this one out:

NEW TURKEY DRESSING

4 c. crushed dry bread — 1/2 c. uncooked popcorn
1/2 c. sage ————1 tsp. salt
1/4 c. onions ———-5 c. broth
1/2 c. celery

Mix well; stuff turkey. Cook 5 hours at 300 degrees or until popcorn blows the ass off the turkey.

Six weeks out… at any point in the year. Turkey is a frequent star on our table…often it is even cheaper than chicken, tastes good, and makes a pleasant change. Had a thigh last night with some sweet potato and home-growed green beans.

If we are going to go turkey, try this dipping sauce from AB. It is a game changer.

1 pound frozen cranberries

2 cups orange juice

3 cups ginger ale

2 tablespoons maple syrup

2 tablespoons light brown sugar

1/2 teaspoon kosher salt

1 orange, zested

Combine all ingredients in a non-reactive saucepan, (stainless steel) and bring to a boil. Reduce heat and simmer, stirring occasionally, for 30 to 45 minutes or until liquid is reduced by half.

Carefully puree with an immersion blender or blender until smooth. Check for seasoning and serve in small ramekins.

Num Num. Make your doctor happy and use the oven or hot air cooker V the oil. Can’t hardly tell the difference in the taste and your arteries will thank you for it later. Plus you won’t get hot oil spattered on “your tender nuggets” if you have a tendency to cook nekkid. “He was standing in the kitchen with nothing but an apron on. No woman EVAH started a fight with a man while he was cooking or cleaning in a kitchen.

Lady Friend likes chicken tenders. Gots to make extry since she has a way of sneaking them to Little Chapman.
