The World’s Best Crab Cakes (TWBCC)

This crab cake recipe is my spin on a combination of Mrs.AW1’s mom’s and mine’s, both excellent home chefs. Any fault they may have had would be a tendency to over-season their dishes. In creating TWBCC’s the absolute least additives and ingredients should be used- I want the crab to star, not the filler. Technique is just as important, too. So back by popular demand…

You’ll need:
Half Sheet Pan, Cooling Rack
1 pound pasteurized lump crab meat
2 eggs
Half -1 cup mayo
Half cup Panko crumbs
Juice from one lemon
Sea salt and fresh cracked pepper to taste
Dash or two Wooster sauce (optional)
Pinch or two Old Bay (I grew up on the stuff- optional for everyone else)
Flour
Fresh parsley for garnish

You’ll Do:
Whisk eggs, mayo, lemon juice, S&P, options to combine
Gently fold in crab
Gradually stirring add Panko until desired consistency is achieved
Form into patties, holding their shape “on a wing and a prayer. Dust with flour
Refrigerate for an hour
Pan fry in butter or neutral oil for 3-4 minutes a side, or bake in a preheated 350 degree oven for 15 minutes or so flip, complete in an additional 10 minutes
Hit with a pinch of salt and let rest on the Cooling Rack
Garnish with the parsley
Serve with buttered sliver Queen Corn on-the-cob and fresh sliced tomatoes

Here you go ‘weeds and weedettes! The overwhelming proof that AW1Ed loves us and wants us to be happy. The Aeronautically Designated Squidly Swabbie has, in addition to his other duties AND with a corresponding cut in pay, given us a portion of his spare time to delight our palates and give us a break from the run of the mill beef, fowl, and porked beasts.

Enjoy these Brother Roh-Dog, it was our eloquent pleas that got this one posted. He wouldn’t of done this for just any ol’ dog faced pony soldiers.

These were planned for the surf & turf meal we were going to layout while enjoying the amenities here. Cool video, excellent destination Family Vacation Spot.

You Must use Jumbo Lump….!!!!

If you are buying the meat in a tin or from a store, jumbo works great.

If you are picking the meat from steamed crabs, the meat in the legs is by far the sweetest. You don’t get much per joint, but it is a crime against humanity to not include that meat in the cakes.

Obviously those who cook like to cook with pressure can’t compete with things that need frying or browning. So we’ll go with something else… Instant Pot Crab Bisque Ingredients 1 lb. Fresh Crab Meat – you can use imitation or frozen meat too 3 Cups Vegetable Broth – you can use seafood broth too 2 Onion – thinly sliced 1/4 small 2 Stalks Celery – roughly chopped 1 Large Carrot – thinly chopped 1 Medium Red Bell Pepper -thinly chopped 2 garlic Cloves – thinly chopped I can Crushed Tomatoes 2 Tbsp Tomato Paste 2 Tbsp Butter 1 Tbsp Avocado oil – any light oil 1/4 Cup Cream Herbs & Spices 2 Bay Leaves 1 Lobster Boullion – optional 1 Tsp Old Bay Seasoning 1 Tsp Thyme – dry 1/2 Tsp Smoked Paprika – or cayenne pepper – optional 1/2 Tsp Ground Black Pepper 1/2 Tsp Salt Topping: 1 Medium Tomato – thinly chopped 2 Stalks Cilantro – thinly chopped 1 Tbsp Olive Oil 1/2 Tsp Dry Thyme 1/2 Tsp Chili Flakes Instructions In a bowl, add all the toppings ingredients and mix. Keep aside for later use. Switch instant-pot to the saute mode and add butter, oil and bay leaf. Add chopped onions and saute for 2 minutes till slightly pink. Now add garlic and saute for a minute. Add herbs+seasoning, celery, carrots, bell pepper and saute for 2-3 minutes (till the carrots begin to soften). Now add crushed tomatoes, tomato paste, crab meat and broth. Give everything a quick stir and set to high pressure for 15 minutes. Once complete, allow to come to a natural pressure release. Finally add the cream and use a hand blender/immersion blender to blend everything as per taste (some like it thick and some like it thin). Transfer the crab bisque to serving bowls, add topping and serve. Enjoy hot. We made this after a crab feast with steamed crabs, corn on the cob, etc with friends last year. All we’re having ’round here is creamed asparagus on toast. Only having the first batch today because it has taken this long to find some real spears of asparagus. What most of the stores sell now are those skinny little spears, the kind we disposed of back in the day.

Damn tasty.
Notes:
-makes about 8 thin patties, 4 thick guys
-maybe butter too? in addition to all that mayo?
-gf used seasoned 4C (parmesan cheese type) eh, prob better with ritz cracks pounded to dust
-put them on a oiled baking sheet! Do not use foil (again, gf made THAT mistake and we missed the crunchy outside!)
-Miller lites were had
-pairs well with a salad with veg grow from your own garden: radishes, red romaine, tomatoes etc with bleu cheese
-sound track: Supremes, Otis Redding, Flamingos, and a little Mister Bobby Darin mixed it!

Big O. I won’t gloat too much over the fact that it was my pleasure to know Otis Redding, his wife Thelma, and members of the group as a teenager. He got his start in my HOR town and played at some the honky tonks. One in particular was a place that my sister worked part time at and my BiL was the bouncer. A supreme tragedy that his life was cut short so soon. His place is right up the road from me, see Ms Thelma in passing now and again, and his grandson is carrying on his legacy. Sounds and looks almost just like his Grandpappy. I still have a coupla of his FIRST Edition 33 rpm poly vinyl carbons, and his other stuff on CD digitally remastered. Saw him perform this and other cuts along with “Dock of the Bay” just about a week or so before the plane crash.

Tanks Man and yes, in spite of many trials and tribulations I have been blessed. Correction to the auto corrupt, Big O’s wife’s name is Zelma, didn’t catch that blip when I hit post. My man did an upload on this thing the other day and that’s a new “feature” that I’m not quite used to. My departed Mother’s name is spelled very similarly to that and I have to do a force spell on it too. One of my all time favorites is “Dreams to Remember.” Crooning that one in Ms Thang’s ear can be real panty dropping stuff. I served with a Home Boy SSG that went to school with Otis and there are still a number of people in and around Macon that remember him as well and even better than I do. The insurance money that Capricorn Records got from the plane crash financed their growth and allowed them to promote the Allman Brothers and others. We won’t go into some of the dirt I know about the music industry. The town that Otis was born in, Dawson Georgia, was a refugee camp near the end of the WBTS. A number of families from other parts of the State, Atlanta and Middle Georgia were sent there. There is a monument that was placed in the city soon after the War by the white folks, praising the Blacks for what they did in taking care of them and their loyalty to Family. Contrary to what Hollywood and others would want you to believe, very, very, very few bondsmen/slaves were abused or whipped by their owners. They literally were part of the family. We pay Honors every year in November to Col Abner Redding and his brother James that fell at the Battle of Griswoldville. People forget or don’t know, that when Sherman marched thru Georgia, the Black Folks suffered just as much, and in some ways even more, than the White Folks did. But I digress.
