Friday’s Recipe

OK, Delta Whiskies and Whiskettes. Still a bit vague on why I got roped into this, so in my spare time, here’s Friday’s recipe.

Best-Ever Chicken Carbonara

You’ll need:
12 oz. fettuccine (or pasta of choice)
4 slices bacon
3 cloves garlic, minced
1/2 lb. boneless skinless chicken breasts, cut into strips
Kosher salt
Freshly ground black pepper
4 large eggs, beaten
3/4 c. freshly grated Parmesan, plus more for garnish
1/3 c. freshly chopped parsley, plus more for garnish

You’ll do:
In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to pot.

Meanwhile, in a large skillet over medium heat, cook bacon 5 minutes. Add garlic and cook until bacon is crispy, 2 to 3 minutes more. Transfer to a bowl and drain half the fat in skillet.

Add chicken to skillet and increase heat to medium-high. Season generously with salt and pepper and cook, flipping halfway through, until no longer pink, 10 minutes.

Reduce heat to low and return bacon to skillet. Toss, then add cooked pasta and toss until combined.

In a small bowl, beat together eggs, Parmesan, and parsley and season with salt and pepper.

Pour egg mixture over pasta and toss until coated, then add a couple tablespoons pasta water until creamy. (Add more pasta water by the tablespoonful as necessary.)

Garnish with Parmesan and parsley and serve immediately.

Crusty bread and a chilled white vino to go with, bask in the adulations of friends and family.

Looks right tasty Bro, but then again you had me at bacon. Will give this one a try, always good to have a reason for crusty bread and vino with acculating friends.

Was wondering about what to do if chicken was lacking in the storehouse. Was just at the store and couldn’t think of any reason to buy chicken. Yeah. More bacon sounds like a reasonable substitution.

This sounds like good for dinner, and any leftover good for breakfast. Or vice versa.

If you can spring for it, do pancetta versus regular bacon. You won’t regret it.

True. But, too late for that now. Got plenty of bacon in the freezer, and made the periodic (monthly?) grocery run today. Lotsa pasta around, in fairly expansive variety. Soooo. Will make do.

While we are on the subject of pasta, the story goes that Pres Lincoln came up to nyc for a dinner date meeting with the Mayor in Little Italy, Manhatten. Abe is in a horse drawn carriage being driven by his chauffer up to the meeting place but after an hour of driving for a half hour drive, Abe asks his driver why it was taking so long to get to the restaurant and the driver says: I’m sorry Mr. Lincoln but I lost the directions to the Spaghettisburg address. I used my old noodle commenting on this one.

For those who just don’t do raw eggs (like me – I can’t even stand the thought of eating raw eggs), this recipe might be a reasonable substitute.

It uses leftover cooked chicken, but would probably be easy to modify to use raw chicken instead (simply cook the chicken per the instructions in AW1Ed’s recipe).

AW1Ed, IMO if the egg is still runny at all it’s raw. And most pasta sauces, even cream-based ones, are as runny – or runnier – than a raw egg.

Eh, 2 aspirin and a liter of water before turning in works well enough. Just gotta make sure you have a clear path to the bathroom. (smile)

Sorry, but any recipe that starts out “four strips of bacon” is already flawed.

Perhaps four slices per serving…….

“…four slices…”? Damn I better go back and read that again. I read it as 4 pounds.

Eggs cooked about any way go real good with Cheese Grits with shrimps. just saying.
