Congrates Jay…I hereby forthwith do pass unto you the crown of FIRST for the TAH Wednesday Midweek Open Thread. Welcome to thebesig’s jotting down on the Veteran’s Desk Copy to do list page book. Lord over long and pester.
I was FIRST at the meat counter at the K Roger Store when the market manager was doing a reset. He discounted me some 96 lean/ 4% fat grounded round grillable beef beast. Gots me about 20 1 lb packs for $3.99 ea. This ain’t that plastic tube stuff neither, fresh ground. Usually get $7.99 per ea. Gotta move some bacon, beef and porked orasted beast around to get it in the freezer.
Grilled bacon cheese burgers in the mess hall at Firebase Magnolia…wid some orasted taters…Neopolitan ice cream over cookies.
Beef that lean will dry out on the grill in heartbeat. Pro tip- build a two stage grill, one side hot the other not. Sandwich a fat pat of butter in the center of your burger patties, and grill almost to desired done-ness on the cooler side of the grill. Finish with a quick sear on the hot side, slap on the cheese and return to the cooler side to finish.
Say goodby to dry burgers.

If it ain’t a dripping burger juice from the ‘stach into the beard, it’s over cooked.
Doc told me to stick to the lowest fat, leanest beefed beast I can get. Trying to keep him happy. Most of my direct grilling is done in a fairly large fire pit with an oversized triangular stainless steel mesh grill my departed Marine Buddy made for me. Gives me a lot of heat control areas.
Brings some made up crab cakes wid ya. We’ll get fat and happy.
