Did you know two cases (500 rounds) of 2 3/4″ shotshells will fit in a Homer bucket with enough room for some other loose stuff you have no idea from whence it came, along with a little desiccant that you can purchase a ‘gallon’ (7 lbs) of off of amazon?
One of these days I’ll have enough, sure as shit ain’t today and tomorrow isn’t looking good either!
The bacon. I took an informal vote of my family, and I’m on my way to the store to get some of each. Okay, a lot of each for this week’s menu.
Bacon laid in a basket weave instead of bread to go with the plethora of tomatoes from the garden.
Bacon laid realclose so they cook together to form a bacon-tortilla for Ceasar chicken, Club, Buffalo Chicken, Avocado Cheddar and every-other-type of “wraps”.
Bacon – thick cut – sprinkled with brown sugar and baked into Bacon Candy. For crumbles for hot fudge sundaes and Bacon-Maple-Pecan cookies.
Bacon wrapped pineapple spears (sprinkled with Tajin) to go with the bacon wrapped shrimp on the grill. And the bacon wrapped pork chops on the grill.
Open to recipe suggestions…

OAM, add a touch (or more, depending on your taste) of cayenne or crushed red pepper to the bacon candy
A jalapeno hollowed out, filled with cream cheese, wrapped in bacon, and grilled.
We call them jalapeno poppers.
Remembered another –
Potato salad with dill and bacon and chives.
Given the forecast, I think this one is happening for sure this week.
No bacon-wrapped bacon??? 😜

Green Beans and Bacon
You’ll need:
2 1/2 pounds green beans, trimmed
Kosher salt
1/2 pound bacon, roughly chopped
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper
You’ll do:
AW1Ed-this is sorta my Thanksgiving staple everyone hates on-Green Bean Casserole. For that I’ll the red pepper flakes, onions and pecans, substitute those fried onion things, add cream of mushroom soup and Worcestershire and bake it. Yes, bacon in that casserole thing means everyone gobbles it up and not just on Turkey day.
Tried to avoid the whole casserole thing here- childhood trauma.*grin*
The trick is to not overcook the green beans- al dente all the way.
Serve with boiled new potatoes- two sides at once.
And I was thinking of your recipe with some fried, quartered potatoes…two sides, one pan! Potatoes fried in the bacon fat, of course.
