Huevos Rancheros

No rest for the weary, Delta Whiskies and Whiskettes. Still wondering where the Good Idea Fairy that roped me into this came from. Georgia, I think. Anyway Friday’s Recipe as promised is authentic Huevos Rancheros, and here ’tis.

Huevos Rancheros

You’ll need:
(yields 4 servings)
2 tablespoons vegetable oil
4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled
½ cup salsa
You’ll do:
Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.

Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.

Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon and salsa.

In this part of the country you will never find refried beans or bacon anywhere near Huevos Rancheros. Simply a tortilla, an egg, ranchero sauce or green chile sauce, topped with shredded cheese.

A twist on a local favorite:

The breakfast burrito is almost a religion here. For simplicity:

Sea Dragon’s Deconstructed Breakfast Burrito

2 frozen hash brown patties
1/2 lb sausage, crumbled
10 oz refried beans
3 eggs
1 cup salsa, or roasted chopped green chile
1 cup shreaded cheese

Place hash brown patties in the bottom of a 5×7 inch baking dish. Cook in the microwave according to package directions.

Scramble the eggs. Cook and drain the sausage.

Layer the sausage over the hash browns. Spread the refried beans over the sausage. Cover with the scrambled eggs, then salsa, then cheese.

Microwave until the cheese is melted. Serves 4.

Can be made in a larger quantities, just bake at 350 until the cheese melts.

And for the people who like to cook under pressure:

Ingredients

Ranchero Sauce
1 (28-ounce) can whole peeled tomatoes
2 cups tomato juice
1 cup water
1 yellow onion, halved and thinly sliced
1 poblano pepper, seeded and thinly sliced
1 serrano pepper, thinly sliced
3 tablespoons extra-virgin olive oil
2 teaspoons ground cumin
Kosher salt and freshly ground black pepper

Quesadillas
8 (6-inch) corn tortillas
1/2 cup refried black beans
1 cup grated Monterey Jack cheese
4 tablespoons unsalted butter

To finish
8 large eggs
Fresh cilantro, for serving

Instructions

To make the ranchero sauce: Heat the oven to 250 degrees.

In an Instant Pot, combine the tomatoes, tomato juice, water, onion, peppers, oil and cumin. Season with salt and pepper, seal the lid, and cook for 20 minutes on the manual setting.

When the timer sounds, use the quick release to release the pressure. Use an immersion blender to puree the sauce. Season to taste with salt and pepper.

Meanwhile, make the quesadillas: Evenly spread 2 tablespoons of the beans on four of the tortillas. Divide the cheese evenly between the tortillas, then top with the remaining tortillas.

Melt 1 tablespoon of butter a nonstick skillet over medium heat. When the butter is foamy, add one quesadilla. Cook until lightly browned and cheese has melted, 3 to 4 minutes per side. Transfer to a baking sheet and place in the oven to keep warm. Repeat with remaining quesadillas.

To finish: Crack the eggs directly into the puréed sauce in the Instant Pot, spacing them as evenly apart as possible. Seal the lid and cook on manual for an additional 2 minutes. Use the quick release to release the pressure and serve with the quesadillas and fresh cilantro.

“…roped me into this…” “Georgia, I think.” ?!?DaHell?!?!! Aw hells to the nah. I distinctly remember that the TAH Lioness posted the FIRST Friday Recipe and YOU were on it like a Georgia Boy on a bacon stuffed cat head.

And of all the Good Ideas that the Good Idea Fairy has ever had, the expansion of the cooking segment is one of the gooderest. Eggs is getting back to the price they should be. Well close anyhows. K Roger had large dozen @ $1.09 today, and plenty of them on the shelf.

Tanks guys! And BTW, EVERY recipe goes better with bacon.
