Thursdays Are For Cooking

Ex is out taking care of personal business ashore, Sir, and asked me to fil in for todays cooking post. So here’s a hearty, one pan dish so simple even a big dumb Polack like me can make it.

Roasted Potatoes and Kielbasa

Ingredients:
3 lbs small red potatoes, cut into to 1/2 inch slices
2 Tbsp extra light olive oil (or any high heat cooking oil)
2 Tbsp minced fresh parsley, or 1/2 Tbsp dried parsley
1 tsp sea salt
2 garlic cloves, pressed
1 lb kielbasa, or sausage cut into 3/4 inch rounds

Do:
Preheat Oven to 400F. Line a large baking sheet with parchment paper, or Silpat. I use foil.

1. Place potatoes and kielbasa in a large mixing bowl.

2. Add parsley, 2 pressed garlic cloves, 1 tsp sea salt, and 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400F for 45-50 minutes or until potatoes are browned an crisp. Stir halfway through baking with a spatula to ensure even browning.

Garnish with fresh parsley if desired and serve warm.

Crusty bread and a bold red wine, and good company to go with. Enjoy!

num num num. Lubs me some orasted baked red taters… and sausages/kielbasa…and fresh baked crusty bread…and chilled bold red wine…and good company. I think you’ve put this on a comment post a time or 2 before, cause I’ve made this. Yo happy azz got me back in to using more olive oil, had gotten out of the habit. Found some Johnsonville Brats with cheddar cheese in them. It added another level. From the what it’s worth dprt, there is a 6 pounder beef orasted beast that’s been percurlating lowly in the crockett pot since about 0500 hrs this morning. Prolly make a pot of rice and some steamed trees with cheese to go with him.
