Thursdays Are For Cooking….

This should fill up empty tummies quickly. I’d add cornbread or chicken (or beef) tacos to go with it, or other crunchy stuff on the side. But since it’s Spring and the weather is frequently less predictable than it is in winter, I’d term this a cross-over dish and make it kind of thick with the good stuff. I might also throw in a bit of smoked beef sausage, just to give it extra oomph! But that’s just me….

Black Bean Soup

2 15-ounce cans of black beans, rinsed and drained

2 4.5 ounce cans of chopped green chilis (if you don’t tolerate that heat, ease off on it)

1 14.5 ounce can of Mexican stewed tomatoes, undrained

1 11 ounce can of whole kernel corn

4 scallioins, sliced

2 carrots, sliced

2 to 3 Tbsps chili powder

1 teaspoon of ground cumin

1/2 teaspoon dried minced garlic

Combine all ingreients in a 5-quart slow cooker. Cover and cook at HIGH for 5 to 6 hours.

Side dishes: cornbread, fresh and hot; taco or corn chips; cut veggies e.g., celery, baby carrots, green onions, bell peppers, etc.

Enjoy it. It’s good for the warm-to-cold swings that are probably going on in the weather everywhere right now. It was nearly 60F yesterday, barely 50 this afternoon and tomorrow may drop back to the upper 30s. And snow is predicted in my area for Monday morning.

Welp, we were waitin’. Not shore when this actually dropped, I been a nappin’…as in snoozin’, NOT Knappin’, the makin’ of arrowheads. This time tomorrow, I mighta been a lurkin’ around for the Friday TAH Weekend Open Thread to holler out FIRST…you know, just cause I can…and to piss off a few folks. Y’all be awatchin’ for it, cause I won’t leave it layin’ there, orphaned, for too long. Hope you’re doing well Mi’Lady this is lookin’ good. You shorely had me at “…add cornbread…” and “…throw in a bit of beef smoked sausage…” That’s me too! It’s a very balmy mid 70s F here at Firebase Magnolia and supposed to hit 80 F by the weekend. I do believe the perch, blue gill, and crappie down at Doc’s pond might be a’callin’ my name. Crickets are chirpin’ in the tall grass back yonder and done found some big ol’ fat earthworm hills by the Black Walnut tree. Hmmm Since it got late, I got hungry and cheated today. Went uptown to see my other girlfriends at the local cafe. Got a plate of Southern Fried Yard bird beast, some steamed cabbages (with ham hock, of course), some of her creamy baked mac n cheese (yes, mac n cheese is classified as a veggie down heah), some Lacy Jane fried Hoe Cakes, and the house wine…sweet iced tea. Got Lady Friend the Hamburger Beef Beast Steak (with brown gravy…nose thumbed at the Hardin Boy), mac n cheese, and the candied yams. Enough on each plate for two meals so supper is taken care of already. Lady Friend likes to sop up her brown gravy with some of the hoe cake and uses the rest to crumble up in a glass of buttermilk. Got word that Baby Brother wants to plan the annual Family Re-Funyun for the time frame around the 5th of June this year. Yes’um, a cornmeal and spicy beer,egg, and milk batter. Zatarain’s is my go to for cheat/commercial seasoning. Do fried (deep fat Crisco), baked, and grilled. Usually don’t keep anything that is not filetable, not gonna fight them bones. Might take some chicken livers and snag some catfish too. Honey Hush (puppies). Remind me one day and I’ll tell you the story where the term “Hush Puppy” came from, leastways, our version of the story.

Welp, just for you, here’s a two-fer. As y’all should know, way back yonder the kitchen was a separate building from the rest of the house. This was for helping keep the rest of the house cool and to limit the danger from kitchen fires. An open air, sometimes covered porch/walkway would connect the the kitchen to the house. Since everybody would keep hunting and yard dogs around, when Cook would bring the food into the dining room the dogs would trot along side, generally barking their damn fool heads off, begging for a sample. Hence the term “Dog Trot” for that covered porch. Since Southerns have always had a corn meal based diet, for breads and coatings, Cook would take the excess cornmeal batter to make little fritters or balls of cornmeal. Cook would toss these tidbit morsels to the pups and holler out “Hush Puppy, git on outta heah”. The hush puppies would generally keep the K-9s occupied long enough to get the platters/bowls of food into the dinning area. Another pro tip on good hush puppies is pieces of bacon bits, fish or shrimps mixed in the batter and deep fried inside. A true art to proper Hush Puppies (or Corn Dogs as they’re called in some locales) proper hot oil, don’t cook too long or not enough.

And now you know…the rest of the story. Got this and watched/heard both of my Grandmothers do this when I was just a young puppy myself…that wouldn’t hush.

The original kitchen at Firebase Magnolia is now a huge Master Bath. The original dining area is a Master Bedroom, china closet (glassed doors) is a bookcase. The Dog Trot has been turned into a walk in closet on one side, a laundry area on the other with a connecting hallway housing some wardrobes. Closet space was not built into these old farmhouses. Made some of them by closing in the area on either side of the free standing, central fireplaces.
