In these troubled times, a little comfort can go a long way to improve one’s outlook. Simple is also important- an unnecessarily complicated meal can be frustrating to make, and generally blows up the kitchen. No one needs any of that. So Ex, in her kindness, convinced me to go with her idea.

Home made cornbread and Baked Beans.

Corn Bread

You’ll need-

6 tablespoons unsalted butter, melted, plus butter for baking dish

1 cup cornmeal

3/4 cup all-purpose flour

1 tablespoon sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs, lightly beaten

1 1/2 cups buttermilk

You’ll do-

Preheat the oven to 425 degrees F. Lightly grease a baking dish or skillet.

In a large bowl, mix together the cornmeal, flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, mix together the eggs, buttermilk, and butter. Pour the buttermilk mixture into the cornmeal mixture and fold together until there are no dry spots (the batter will still be lumpy). Pour the batter into the prepared baking dish/skillet.

(Here’s where I add a hand full of grated Cheddar or Jack cheese. Stir.)

Bake until the top is golden brown and tester inserted into the middle of the corn bread comes out clean, about 20 to 25 minutes. Remove the cornbread from the oven and let it cool for 10 minutes before serving.

Baked Beans.

You’ll need-

A can or two, I like the kind named after a former pair of Presidents, Country Style.

A package of Kosher hot dogs

A shot of Kahlua (Two really. One goes in the cook). Don’t skip this, MrsAW1 has been putting Kahlua in her baked beans for years.

A can opener.

You’ll do-

Open the can(s). Add to a suitably sized pot, or baking dish.

Slice the Kosher dogs into bite sized pieces. Add.

Add Kahlua to both the pot/dish and the cook, stir and heat ’till simmering either on the stove top or in a 350 degree oven for 30 minutes or so.

Ice tea or a tall cold glass of milk are perfect beverages for this.

You didn’t really think I’d serve up kimchee and fish heads, did you?

I have always wanted to try cast iron skillet cornbread. I may try it this weekend. Ummmm…….

(first I need to find an appropriate bare bones cast iron skillet. Would a La Cruset style enameled cast iron skillet work? I’d hate to ruin one, they can get expensive. I have a collection that even Ex would be jealous of)

Pro tip on the cornbread. Delete the sugar, this ain’t Jiffy Mix. Pre-heat the skillet to temp before pouring cornbread mix into skillet. That gives it a quick sear to the outside/bottom and makes for a more crunchy crust. And for sure, they might not have been the “Best” Presidents, but they do make the “Best” beans. Trivia note; one of the original “Bean” Family members (not of the former President’s lineage) was one of the last surviving Confederate Veterans. His family had hired a few substitutes for him as he was the youngest and his older brothers were already serving. He got caught up in the last of the drafts toward the end of the war and served as a teenager in the militia. Or so a story went. Political correctness has deleted some of this.

Thanks for sharing Bro, and yes…some of us were concerned that you would have a fish head soup and kimchee recipe. It was discussed on the Ex thread that could happen. Good thing you went with this. It might have cause a mutiny otherwise.

Tox. iffen ya needs it, I have some extry umbrage. I traded the last of my phuques for a supply of umbrage. Figured it may come in handy around here. Check the flea markets and yard sales for a good, old school skillet. The old ones will generally be well seasoned. Any you see marked Griswold will be rather spendy. If you do see a Griswold that seems to be reasonable (less than 40 USD) BUY IT! Most of the Lodge pieces are now made in China, they are not inexpensive, but they are cheap. Good Luck. I have a fairly decent collection my own self. Use them for home defense …you know…since the flood during the tornacane/hurrinado/quicksand flood boat accident.

And Bro ‘Ed. Might of been Ex’s idea, but she DID leave you in charge. When in Command…Command!

I made that ravioli sausage baked dish that you had a week or two ago and of course I caught a lot of flack by my old school friends who thought that ravioli had to be cooked first before baking and you can’t dump macaroni/pasta from the box into a sauce/gravy filled skillet and simmer it and that the pasta/macaroni has to be cooked in water first and then tap water run over it to get the starch off. I found out that these are myths which are carried on from Mother to Daughter. These are friends I hang out with who were born before WW 2, so you can see that this stuff goes away back.

Just got through blanching fresh green beans for Green Bean Casserole with cream of mushroom soup & crispy fried onions.

In the crackpot is tomato parmesan beef pot roast to be served with a helping (or two) of the bean cassorole along with hot German Potato Salad that I made yesterday.

Kimchee and fish heads, Ed??
