Ex has pressed me into service once again, as she gets her life back in order after her ordeal. She and Punkin are doing fine now. Here’s another simple recipe, so easy even a certain firefighter can make it. *grin*

Simple Yard Bird Soup

Ingredients

Carcass and bones from one 4- to 5-pound roasted chicken (or a
mild-flavored rotisserie chicken)

4 cups low-sodium chicken broth

4 cups water

2 medium carrots, sliced into 1/4-inch-thick rounds

2 celery stalks, sliced into 1/4-inch-thick slices

1 medium onion, chopped

1 bay leaf

1/2 cup white rice

2 tablespoons chopped parsley

Kosher salt

Fresh cracked pepper

Directions

Put the bones and carcass from a leftover chicken (they can be in
pieces) in a large pot. Cover with the broth and 4 cups water. Bring
to a boil over medium-high heat, reduce to a simmer and cook for 20
minutes. Skim any foam or fat from the broth with a ladle as
necessary.

Remove the bones and carcass with tongs or a slotted spoon; set aside
to cool. Add the carrots, celery, onion and bay leaf to the broth,
bring back to a simmer and cook until the vegetables are about half
cooked (they will still have resistance when tested with a knife but
be somewhat pliable when bent), about 10 minutes. Stir in the rice (to
keep it from sticking to the bottom), and cook until the grains are
just al dente, 10 to 12 minutes.

Meanwhile, when the carcass and bones are cool enough to handle, pick
off the meat, and shred it into bite-size pieces.

When the rice is done, add the meat to the broth and simmer until
warmed through, about 1 minute. Stir in the parsley, and season with
1/2 teaspoon salt or more to taste, and pepper. Remove the bay leaf. Serve hot.

Saltine crackers crumbled on top wouldn’t be a bad thing, a glass of chilled white vino and good company to go with. Enjoy on a cold, damp day, or just the thing after shoveling the snow off the sidewalk. Enjoy!

Here is a rye-biscuit recipe that I whipped up last week.
(Note: My ancestors are from the South and I live in Texas – we put things together until the spirits of our ancestors whisper “That’s ‘nough, honeychil’.”
Also I wanted to make rye bread, but Favorite First D-i-L borrowed my yeast before Christmas, and I was all out. So – biscuits it was.)

Rye biscuits – makes about 12

Heat oven to 450
In large bowl, mix:
1 c rye flour
1 c all-purpose wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Cut in:
1/2 c Crisco or lard

When it looks like meal, cut in:
1 tbsp Steens’ Pure Cane Syrup
1 tbsp honey (wild honey if you can get it)

Mix in 1/4c-1/2c soured milk until you have a workable dough.

Kneed 20-30 times
roll out 1/2″ thick, and cut out biscuits with a jelly jar, placing them on a flat baking pan.
Re-form left over dough and cut until it is all used.

Cook 10-15 minutes or until brown.

Butter them while hot.

Note – with the rye and cane syrup these will have a very strong flavor. Not everyone likes them. Their loss.

Glad to see you back at the keyboard. We were all praying (for those of us that do that) for your speedy recovery. Maybe even Lars put in a good thought to his favorite spirit of a dead hero of Communism. Anyway, we are all happy to see you at home and on the mend.
