Thursdays Are For Cooking

This has nothing to do with a drunken jarhead breaking into someone’s house at 4AM and cooking the homeowner’s food. Nothing.  All they ever do around here is fly over my house in a Sikorsky.

But as everyone knows,  bacon and eggs are the Food of the Gods. So here’s yer Thursdays recipe. This should more than adequately feed at least one jarhead.

Egg casserole for TAHers:

1 cup of shredded cheese – cheddar is suggested, but choosing cheese is a personal thing

6 beaten eggs

2 green onions, chopped

3 tablespoons milk (whole milk is creamier than 2%)

6 slices of bacon, diced

½ teaspoon of minced garlic (less if you don’t like garlic, and Mrs. Dash Garlic-Herb is good for this, too)

Salt and pepper to taste (you can substitute Mrs. D here, as noted)

2 slices of bread, cubed

1/3 red bell pepper, diced  (I’d make this an option)

Instructions:

Preheat the oven to 350F

Stir the cheese, eggs, milk, bacon, onion, chopped pepper, bread cubes, seasonings together in a bowl

Pour into a prepared baking dish (“prepared” means lined with foil or greased with butter to keep it from sticking)

Bake in the preheated oven until the eggs are set, 20 to 25 minutes.

Let it sit on the stovetop for a few minutes before you cut it into portions.  Also, there is nothing that says you can’t throw in chopped ham, chopped leftover boiled potatoes, chopped celery – the possibilities are endless.

If that’s too much work, you can toast a couple of shredded wheat biscuits (the LARGE ones), fry up a couple of eggs and some bacon, put the eggs on the biscuits, and sit down with the morning news.  Bon appetit!

Interesting that the egg recipe came out today. I just started this mornings breakfast with 2 medium eggs, and a slice of Canadian bacon on two slices of honey wheat toast after months of oatmeal and half a banana with honey mixed in. So if you ever wondered why bad actors were called hams, is that ham is usually associated with eggs/smile

Here’s where Ex and I go knuckles over the eternal fight about skillet fried bacon, or oven baked. I like baked- the rashers are crisp and evenly cooked, The cooling rack goes straight into the dish washer, and the bacon grease is collected from the sheet pan for other uses. Frying eggs, for example.

I use my bacon grease to start the chiminea, completely unnecessary but satisfying.

FWIW we bake our bacon as well….we find it’s a more reliable method and easier to monitor while we putter around the kitchen with other chores… Also we’ve discovered a couple of layers of aluminum foil on your sheet pan makes clean up a breeze, you let the pan sit until the bacon grease starts to congeal, pull of the foil and ball it up and the pan is spotless underneath…wipe down with soap and… Read more »

And on the 8th day God created Bacon. Bacon is proof that God Loves us and wants us to be happy. There is no wrong way to prepare bacon. Bacon goes with anything.

The ladies seem to enjoy a Mimosa, which is champagne and fresh orange juice. I’ll not refuse a Bloody Mary if offered. Those, or a crisp, chilled white wine would do just fine with Ex’s recipe.

So I take it that the “6 slices of bacon, diced” are NOT already pre-fried/cooked/baked/whatever?

Wife does something similar, uses cubed ham and rotel tomatoes which have pepper already in ’em. Says it is a New Mexico egg casserole.

Mix in a bowl- sliced bacon w/brown sugar. Let sit a few minutes. Put the slices on a grill. Cook until done. Eat. Bacon candy is good.

Sounds wonderful. Needs more bacon…

My breakfast was two soft-boiled eggs with hot sauce. That didn’t last long, so mid-morning snack was one avocado diced and put into a coconut-oiled microwavable dish. Cracked two eggs on top, covered, and cooked 90 seconds. Served with hot sauce.

Lasted me until dinner, which is Yayla Çorbası (Yogurt Soup). Mmmm….

Oh, great. What a way to start the weekend – a high speed chase. Heard an inbound siren, a beat up pick-up flies by followed closely by a deputy running very hot. (Way too hot for this narrow road.) So, I’ve tried several times to cook bacon in the oven and, although the bacon turns out fantastic, my oven/house gets filled with smoke when the bacon splatters while cooking. Any tips??
